Everyone knows that oatmeal is very versatile, comforting, warm, filling and very healthy. One bowl of oatmeal is enough for a breakfast. Oat meal is known for lowering the cholesterol levels and thereby decreasing the risk of heart or cardio vascular diseases. Oats also enhance the mood and lower the cancer risk. Oat meal muffins are a good alternative for a bowl of oatmeal. The muffins are easy to make and can be stored for weeks together by refrigerating them, avoiding the need for cooking every day, and they satisfy the health and taste of the consumer.

When healthier ingredients like flaxseed and whole wheat flour are added to the mixture of oat meal muffins, they become even healthier. Whole wheat flour provides more fiber that the person who eats the oat meal muffins feels satisfied till lunch time and the flaxseeds in the muffins offer essential fatty acids. It also requires very less fat for making the oat meal muffins.

Ingredients required for making oat meal muffins are: whole wheat flour 250 g, all purpose flour 50 g, baking soda ½ tsp, baking powder 2 tsps, oatmeal 150 g, flaxseed 100g, egg 1, sunflower oil 50 ml, marmalade cut thinly 150 g, buttermilk 200ml and cane sugar (unrefined) 80 g.

All the dry ingredients are mixed well in a bowl and all the wet ingredients are mixed in another bowl. Both of them are then combined gently. The finally got muffin batter is then spooned in muffin tins kept ready with liners and baked in a oven (pre-heated) for twenty minutes. Healthy oat meal muffins are done.

Hope this isn't too off topic but by far my most memorable muffin experience was my discovery of the chocolate chip muffin at maybe age fourteen around 1971 with my mom and sis at a restaurant that was just outside Boston called The Pewter Pot.

It seemed exciting and decadent, even far-fetched and nearly incredible. But then I was just a kid from small-town New Hampshire...
