Chocolate Chip – Chocolate Muffin Recipe

Chocolate lovers and muffins lovers would really love to eat these chocolate chip – chocolate muffins. The very look of the muffins can make the mouth watery. Chocoholics might find them irresistible for sure.

Coarsely chopped, unsweetened chocolate squares – three, chocolate chips (semi sweet) – one and a half cup, all purpose flour – one cup, baking soda – half teaspoon, salt – half teaspoon, big eggs – two, firmly packed light brown sugar – one cup, whole milk – two by three cup, melted and lightly cooled butter (unsalted) – half a cup and vanilla extract-one teaspoon.

Unsweetened chocolate and semisweet chocolate chips should be melted using a double boiler top on simmering water. After they have melted should be removed from the heat and should be cooled slightly. Flour, salt and baking soda should be sifted and mixed together in a bigger bowl. A well should be made in the middle and should be set aside. Another bowl should be taken for mixing beaten eggs, milk, brown sugar, butter, vanilla and melted chocolate mixture. This mixture should then be poured into the flour mixer with a well. It is then stirred until it becomes moistened.

Care should be taken not to over-mix the mixture. Remaining chocolate chips should be folded gently inside the batter. This batter should then be spooned into the preheated muffin tin and baked for nearly twenty five minutes. Muffins can be checked for proper baking and then cooled in a wire rack pan.
