Lemon Cream Cheese Muffins Ingredients
These cream cheese muffins not only have good doses of vitamin A but also contain vitamin C as lemon is used in the making. A tangy taste is obtained due to the usage of lemon that kids and adults would love to eat them.
Egg 1, oil ½ cup, milk ½ cup, sugar 2/3 cup, softened cream cheese 4 ounces, flour 1 ½ cups, baking powder 1 ½ tsp, lemon 1, salt ½ tsp, powdered sugar are the required ingredients.
Sugar, milk, oil and egg are mixed together. Cream cheese is cut into very small pieces, 2 table spoons of flour is mixed with the cut cream cheese. Lemon peels (half the quantity) are tossed with the mixture so that the cream cheese pieces are coated thoroughly with them. Baking powder, lemon juice, remaining lemon peel and flour are combined together. All the above ingredients are once again mixed gently and the batter that is obtained at the end is transferred to the muffin tins lined using paper cups (up to 2/3 level of the muffin tins) and then baked for twenty five minutes in a preheated oven.
In the meantime, glaze can be prepared using two table spoons of lemon juice with sugar. It should be made into a consistency which could be used for drizzling on top of the warm lemon cream cheese muffins. Once the cream cheese muffins are cooked, the glazing is done with the help of a pastry brush or using spoon. They should be allowed to cool fully and then consumed.
