Bran Muffin: Healthy yet Delicious Recipe
The bran muffins are very moist and yummy that persons who are eating them might not know that they are actually very nutritious also. These bran muffins are packed with high fiber content that they are good for the bowels. The raisins that are added in the muffin mixture give the needed moisture and sweetness to the muffins while the walnuts offer more nutrition and crunch to the bran muffins. When they are prepared using whole wheat bran and whole wheat flour, they become even healthier.
One and a half cups of whole wheat flour, one cup of wheat bran, half a cup of raisins, one teaspoon of baking soda, one teaspoon of baking powder, three fourth cup of milk, two tablespoons of oil, one beaten egg, half a cup of honey or molasses and quarter cup of chopped walnuts.
The whole wheat flour, bran, baking powder and soda are sifted and mixed together thoroughly. Raisins are added to the dry mixture and mixed and kept aside. Blended egg, oil, molasses and milk are blended very well using a blender lightly. Both the wet ingredients and dry ingredients are mixed until all the ingredients become moistened. This batter is then spooned into the twelve or six muffin tins up to two third level, walnuts can be added on top of the muffins and baked in a preheated oven (four hundred degree Fahrenheit) for nearly fifteen minutes or till the muffins get separated easily from the cup sides.
Note: variations of the above bran muffin recipe can be done by adding chopped dates instead of raisins. Cranberries and blueberries can also be used in the place of raisins to get a good taste. When adding blueberries or cranberries, they should be mixed with the flour so that sinking to the muffin bottom is avoided. Walnuts have many health benefits that the above bran muffin recipe is very healthier apart from being tastier.
