Muffin mix can be made on our own

Muffin mix can be made on our own at our house itself. Muffin mix making is not difficult but very cheap, quick and easy to make at home. The main advantage of making muffin mix at home is that it can be made healthier as we know what ingredients are added into it so that the nutritional value can be increase accordingly.

Baking powder, flour, salt and sugar should be mixed well, shortening agent should be dropped into the flour lightly and the contents should be chilled at least for an hour for getting best results. With the help of two knives or pastry blender, the shortening should be cut so that it looks like coarse crumbs. Less handling is advised. This muffin mix can be labeled and stored properly using an air tight container so that it stays for ten or twelve weeks even when they are not refrigerated. But when it is refrigerated, it can even be used for eight months time.

The muffin mix made at home can be used for making many variations of muffins in no time. For making basic muffins, two and a half cups of muffin mix can be taken with one cup of milk, one teaspoon of vanilla and one egg. All the ingredients can be mixed and stirred well until the mixture becomes moistened allowing the batter to be lumpy. This batter can be filled in a cup cake paper or muffin pan that is greased with butter and then baked in a pre-heated oven for four hundred degrees Fahrenheit for nearly twenty minutes.

Cheese muffins can be made by adding one cup of cheese (grated) to the muffin mix and then all the liquid ingredients can be added. Here vanilla should be omitted.

Pineapple muffins can be made by adding one cup of pineapple (crushed) with liquid ingredients and muffin mix and baked. Here the quantity of milk should be reduced to two thirds of a cup. All the other procedures of the basic muffins remain the same.

    I love muffins! But I can only have gluten free so I never get to eat them anymore. It wasn’t until I read your blog that I realized I could maybe just go buy me one of the many gluten free flours that are available at the health food groceries these days. Yeah Thank you I am going to go out and buy me some GF flour this week and make me some muffins. linda
